  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped walnuts (optional)
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, sugar, and brown sugar until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Stir in the grated zucchini.
  5. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in walnuts if using.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes until the edges are golden.
  9. Let cool completely before frosting.
  10. For the frosting, beat the cream cheese and powdered sugar together until smooth. Spread on cooled cookies.
