  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, cream the butter and sugars until light and fluffy.
  4. Add the egg and vanilla; mix well.
  5. Gradually add the dry ingredients to the wet ingredients until combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment.
  8. Make an indentation in the center of each cookie and fill with raspberry jam.
  9. Bake for 10-12 minutes.
  10. Allow to cool before serving.

Notes

  • For a richer flavor, use dark chocolate chips.
  • You can substitute the raspberry jam with your favorite fruit jam.
