  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest

  • 3 large eggs
  • 1/4 cup honeycomb, for topping

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a medium bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add lemon juice, lemon zest, and dried lavender flowers.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake mixture over the crust and smooth the top.
  6. Bake for 50-60 minutes until the center is set.
  7. Let cool, then refrigerate for at least 4 hours or overnight.
  8. Before serving, top with honeycomb.
