  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried lavender
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 cup honeycomb, for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in lemon juice, lemon zest, dried lavender, and vanilla extract.
  7. Pour the cheesecake filling over the crust.
  8. Bake for 50-60 minutes, or until set.
  9. Let cool, then refrigerate for at least 4 hours.
  10. Before serving, whip heavy cream and spread on top.
  11. Garnish with honeycomb pieces.

Notes

  • For a more intense lavender flavor, infuse the cream with lavender before adding.
  • Make sure the cream cheese is at room temperature for a smooth mixture.
