Tangy Honey Lime Chicken & Avocado Rice Stack That Delights

A delicious combination of tangy honey lime chicken paired with creamy avocado rice, this recipe is sure to impress.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 2 avocados
  • 2 cups cooked rice
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, mix honey and lime juice, then marinate the chicken breasts for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat and cook the chicken until fully cooked, about 6-7 minutes per side.
  3. In another bowl, mash the avocados and mix in cooked rice, cilantro, jalapeño, salt, and black pepper.
  4. Once cooked, slice the chicken and layer it on top of the avocado rice mixture.
