Strawberry Muffin Recipe

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups fresh strawberries, chopped

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk.
  4. Combine wet and dry ingredients, then gently fold in the strawberries.
  5. Fill each muffin cup about 2/3 full with batter.
  6. Bake for 18-20 minutes, or until golden and a toothpick comes out clean.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, add more sugar.
  • Can substitute blueberries for strawberries if desired.
