Slow Cooker Stuffed Bell Peppers

A delicious and easy recipe for stuffed bell peppers cooked in a slow cooker, featuring turkey bacon and chicken ham.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 6 slices turkey bacon, cooked and chopped
  • 1 cup cooked rice
  • 1 cup chicken ham, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese
  • 1 cup diced tomatoes

Instructions

  1. Prepare the bell peppers by cutting the tops off and removing the seeds.
  2. In a large bowl, combine ground turkey, cooked turkey bacon, rice, chicken ham, onion, garlic, seasoning, salt, and pepper.
  3. Stuff each bell pepper with the mixture and place in the slow cooker.
  4. Top each pepper with diced tomatoes and cheese.
  5. Cover and cook on low for 6-8 hours or until peppers are tender.

Notes

  • Can substitute ground chicken or beef for ground turkey.
  • Add more vegetables like spinach or zucchini for extra nutrition.
