Slow Cooker Chicken Burrito Bowl

A delicious and easy slow cooker chicken burrito bowl recipe that’s perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 tablespoon lime juice
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the salsa, black beans, corn, cumin, chili powder, garlic powder, and lime juice on top of the chicken.
  3. Cover and cook on low for 6-8 hours or until the chicken is cooked through and shreds easily.
  4. Shred the chicken with two forks and mix it with the other ingredients in the slow cooker.
  5. Serve the chicken mixture over cooked rice and top with shredded cheese, diced avocado, and chopped cilantro.
