  • 4 slices bacon, diced
  • 3 cups red wine
  • 2 cups beef broth

  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 2 cups mushrooms, quartered
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a skillet, cook bacon until crispy, then transfer to slow cooker.
  2. In the same skillet, sear the beef until browned, then add to the slow cooker.
  3. Add wine, beef broth, carrots, onion, garlic, tomato paste, thyme, and bay leaves to slow cooker.
  4. Cook on low for 8 hours or high for 4 hours.
  5. In the last hour, add mushrooms.
  6. For a thicker sauce, mix flour with a bit of water, stir into the pot, and let cook for an additional 30 minutes.
