- 2 pounds beef chuck, cut into 1-inch pieces
- 4 slices bacon, diced
- 3 cups red wine
- 2 cups beef broth
- 4 carrots, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 cups mushrooms, quartered
- 2 tablespoons all-purpose flour
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- In a skillet, cook bacon until crispy, then transfer to slow cooker.
- In the same skillet, sear the beef until browned, then add to the slow cooker.
