Slow Cooker Beef Bourguignon

A rich and hearty slow cooker beef bourguignon that is easy to prepare and full of comforting flavors.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices bacon, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 8 ounces mushrooms, quartered
  • salt and pepper to taste

Instructions

  1. In a large skillet, cook the bacon until crispy. Remove from skillet and set aside.
  2. In the bacon drippings, brown the beef cubes on all sides.
  3. Transfer beef to the slow cooker and add the cooked bacon, onion, carrots, and garlic.
  4. Pour in the red wine and beef broth, then add tomato paste, thyme, and bay leaf.
  5. Stir to combine, then cover and cook on low for 8 hours.
  6. Add mushrooms during the last hour of cooking.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a thicker sauce, you can mix a tablespoon of cornstarch with water and stir it into the stew during the last 30 minutes of cooking.
  • Serve with crusty bread or over mashed potatoes for a complete meal.
