- 2 pounds beef chuck, cut into 1-inch cubes
- 4 slices bacon, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 8 ounces mushrooms, quartered
- salt and pepper to taste
- In a large skillet, cook the bacon until crispy. Remove from skillet and set aside.
- In the bacon drippings, brown the beef cubes on all sides.
- Transfer beef to the slow cooker and add the cooked bacon, onion, carrots, and garlic.
- Pour in the red wine and beef broth, then add tomato paste, thyme, and bay leaf.
- Stir to combine, then cover and cook on low for 8 hours.
- Add mushrooms during the last hour of cooking.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker sauce, you can mix a tablespoon of cornstarch with water and stir it into the stew during the last 30 minutes of cooking.
- Serve with crusty bread or over mashed potatoes for a complete meal.
