Ingredients

  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the grated carrots, sugars, and oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Scoop the batter into the muffin tin and bake for 20-25 minutes.
  7. Allow to cool before serving.
