  • 1 cup canned pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup cream cheese, softened
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, mix the pumpkin, vegetable oil, eggs, and vanilla until smooth.
  4. Combine the wet and dry ingredients, stirring until just blended.
  5. In a separate bowl, beat the cream cheese with the powdered sugar until smooth.
  6. Fill each muffin cup halfway with batter, then add a dollop of the cream cheese mixture, and top with more muffin batter.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Cool before serving.
