Pumpkin Swirl Muffins

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 8 ounces cream cheese
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine pumpkin puree, eggs, sugar, vegetable oil, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. In a separate bowl, mix cream cheese and powdered sugar until smooth.
  6. Spoon a small amount of muffin batter into each muffin cup, followed by a spoonful of the cream cheese mixture. Then, add more muffin batter on top.
  7. Use a toothpick or skewer to swirl the cream cheese mixture into the batter.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Allow cooling before serving.
