- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 8 ounces cream cheese
- 1/4 cup powdered sugar
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine pumpkin puree, eggs, sugar, vegetable oil, and vanilla extract. Mix until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
