  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 cup butter, softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 cup chocolate chips
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar.
  3. Add the pumpkin puree and mix until smooth.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and ginger.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Fold in the chocolate chips and white chocolate chips.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • These cookies can also be frozen for up to three months.
