1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
1 cup pumpkin puree
½ cup granulated sugar
½ cup brown sugar
½ cup vegetable oil
2 large eggs
8 ounces cream cheese, softened
¼ cup powdered sugar
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In another bowl, beat softened cream cheese with powdered sugar until smooth.
Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture, then cover with more batter.
Bake for 18-20 minutes or until a toothpick comes out clean.
Let cool before serving.
Notes
For an extra touch, sprinkle some cinnamon sugar on top before baking.
