  • 4 oz cream cheese
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the pumpkin puree, sugar, and oil until smooth.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. In a separate bowl, beat the cream cheese until smooth.
  7. Pour half of the muffin batter into a lined muffin tin, add a spoonful of cream cheese, then top with the remaining batter.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
