- 1 pound chicken thighs, boneless and skinless
- 1 cup jasmine rice
- 1 can (20 oz) pineapple chunks in juice
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 2 green onions, chopped
- 1 teaspoon garlic, minced
- 1/2 teaspoon ginger, grated
- Salt and pepper to taste
- Heat olive oil in a large skillet over medium heat.
- Add chicken, season with salt and pepper, and cook until browned and cooked through.
- Remove chicken and set aside. In the same skillet, add garlic, ginger, and green onions; sauté for 1 minute.
- Add rice and stir for another minute before adding pineapple chunks and juice.
- Bring to a boil, then reduce the heat to low and cover the skillet.
- Cook for about 15 minutes or until rice is tender and liquid is absorbed.
- Return chicken to the skillet, stir to combine, and heat through.
- Serve hot, garnished with extra green onions if desired.
Notes
- For a spicier version, add red pepper flakes.
