Pineapple Chicken and Rice

A delicious and easy-to-make meal that combines pineapple, chicken, and rice for a flavorful experience.

Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 1 cup jasmine rice
  • 1 can (20 oz) pineapple chunks in juice
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 2 green onions, chopped
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken, season with salt and pepper, and cook until browned and cooked through.
  3. Remove chicken and set aside. In the same skillet, add garlic, ginger, and green onions; sauté for 1 minute.
  4. Add rice and stir for another minute before adding pineapple chunks and juice.
  5. Bring to a boil, then reduce the heat to low and cover the skillet.
  6. Cook for about 15 minutes or until rice is tender and liquid is absorbed.
  7. Return chicken to the skillet, stir to combine, and heat through.
  8. Serve hot, garnished with extra green onions if desired.

Notes

  • For a spicier version, add red pepper flakes.
  • This dish pairs well with steamed vegetables.
