  • 1 pound turkey bacon
  • 1 medium onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 cups cauliflower rice
  • 2 cups shredded provolone cheese
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and sauté onions, green bell pepper, red bell pepper, and mushrooms until tender.
  3. Add cauliflower rice to the skillet and cook until heated through.
  4. Return the turkey bacon to the skillet and mix with the vegetables.
  5. Top with shredded provolone cheese and cover until melted.
