A delicious and easy recipe for a comforting one pot lasagna soup that is perfect for busy nights.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 8 ounces lasagna noodles, broken
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in crushed tomatoes, beef broth, basil, oregano, salt, and pepper.
  4. Bring to a boil, then add broken lasagna noodles and reduce to a simmer.
  5. Cook until noodles are tender, about 10-12 minutes.
  6. Remove from heat and stir in ricotta and half of the mozzarella until melted.
  7. Top with remaining mozzarella and serve hot.

Notes

  • This soup can be made ahead of time and reheated for a quick meal.
  • Add more cheese for extra creaminess.
