Middle-of-Winter Creamy Tomato Soup (Canned Tomatoes)

A warm and creamy tomato soup recipe perfect for winter, enhanced with turkey bacon.

Ingredients

  • 2 cans diced tomatoes
  • 1 cup heavy cream
  • 4 slices turkey bacon, cooked and chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until soft.
  3. Add the diced tomatoes, broth, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in heavy cream and the cooked turkey bacon. Heat through.
  6. Blend the soup until smooth, if desired.
  7. Serve hot.
