Mexican Street Corn White Chicken Chili Recipe

A warm and comforting chili that combines the flavors of Mexican street corn with tender white chicken.

  • 2 cups cooked white chicken, shredded
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cilantro, chopped
  • 1 cup crema or sour cream, for serving

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the shredded chicken, corn, black beans, diced tomatoes, and chicken broth.
  3. Stir in lime juice, chili powder, cumin, smoked paprika, salt, and black pepper.
  4. Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
  5. Remove from heat and stir in chopped cilantro before serving.
  6. Garnish each bowl with crema or sour cream.

Notes

  • For a spicier chili, add diced jalapeños or cayenne pepper.
  • This recipe can be easily doubled for a larger crowd.
