  • 4 slices turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lime, juiced
  • 1/2 cup cilantro, chopped
  • 1 cup cotija cheese, crumbled

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add onion and garlic to the pot, sauté until softened.
  3. Stir in corn and cumin, cooking for a few minutes.
  4. Add chicken broth, bring to a simmer, and cook for 20 minutes.
  5. Stir in heavy cream and lime juice, then blend until smooth.
