Mexican Chicken with Cheese Sauce

  • 1 cup shredded cheese
  • 1 can diced tomatoes
  • 1 tbsp olive oil
  • 2 tsp taco seasoning
  • 1/2 cup onion, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add chicken breasts to the skillet and sprinkle taco seasoning on top.
  4. Cook for 5 minutes on each side until browned.
  5. Transfer chicken to a baking dish, top with diced tomatoes and shredded cheese.
  6. Bake in preheated oven for 25-30 minutes, or until chicken is cooked through.

Notes
