Korean Cucumber Salad

A delicious and refreshing Korean cucumber salad that’s easy to make, perfect for home chefs.

Ingredients

  • 2 large cucumbers
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 3 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 12 teaspoons chili flakes (optional)
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Slice the cucumbers thinly and place them in a bowl.
  2. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
  3. In a separate bowl, mix sugar, rice vinegar, sesame oil, and chili flakes.
  4. After 15 minutes, rinse cucumbers and drain well.
  5. Add the cucumber to the dressing and toss to combine.
  6. Stir in chopped green onions and sprinkle with sesame seeds before serving.

Notes

  • Adjust the amount of sugar and vinegar according to your taste.
  • For extra crunch, you can add some sliced carrots.
