  • 1 cup pasta (acini di pepe preferred)
  • 4 cups fresh spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine ground beef, bread crumbs, Parmesan cheese, egg, and minced garlic. Mix well and form into small meatballs.
  2. In a large pot, bring chicken broth to a boil.
  3. Add diced carrots and celery to the boiling broth, cooking until tender.
  4. Add in the meatballs and cook until they are no longer pink.
  5. Stir in the pasta and cook until al dente.
  6. Finally, add the fresh spinach and allow it to wilt before serving.
