Irresistibly Indulgent Carrot Cake Cream Cheese Bars

These carrot cake bars are moist, flavorful, and topped with a creamy cream cheese frosting that makes them truly indulgent.

  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the oil and eggs until well combined.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in the grated carrots, pineapple, and walnuts.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely in the pan.
  9. For the frosting, beat together the cream cheese, powdered sugar, and vanilla until smooth.
  10. Spread the cream cheese frosting over the cooled carrot cake bars.
  11. Cut into squares and serve.
