Instant Pot Beef Stroganoff (Ground Beef)

A rich and creamy beef stroganoff made easily in the Instant Pot.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 8 ounces pasta (egg noodles recommended)
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode. Brown the ground beef, onions, and garlic until the beef is fully cooked.
  2. Add the mushrooms and cook for an additional 2-3 minutes.
  3. Pour in the beef broth, Worcestershire sauce, and Dijon mustard, mixing well.
  4. Add the egg noodles, making sure they are submerged in the liquid.
  5. Close the lid and set to manual high pressure for 6 minutes.
  6. Once the cooking time is complete, carefully quick release the pressure.
  7. Stir in the sour cream and season with salt and pepper before serving.

Notes

  • For a thicker sauce, let the stroganoff sit for a few minutes after adding the sour cream.
  • Try adding spinach for extra nutrition.
