  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, egg, parsley, oregano, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes until cooked through.
  5. While the meatballs are baking, bring chicken broth to a boil in a saucepan.
  6. Add the orzo and cook according to package instructions.
  7. Stir in lemon zest and juice once the orzo is cooked.
  8. Serve the meatballs atop the lemon orzo.

Notes

  • For extra flavor, add some feta cheese to the orzo before serving.
  • These meatballs can be made ahead of time and frozen.
