  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin puree, almond flour, coconut sugar, maple syrup, melted coconut oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together baking soda, baking powder, pumpkin pie spice, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until a dough forms.
  5. Drop spoonfuls of the dough onto a lined baking sheet.
  6. Bake for 12-15 minutes or until the edges are set.
  7. Let cool before serving.

Notes

  • For added flavor, mix in chocolate chips or nuts.
  • Adjust the sweetness by varying the amount of coconut sugar.
