- 1 pound turkey bacon
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 2 teaspoons Italian seasoning
- 8 ounces gluten-free lasagna noodles, broken
- 2 cups spinach, chopped
- 1 cup dairy-free cheese (optional)
- Salt and pepper to taste
- In a large pot, cook turkey bacon over medium heat until crispy. Remove bacon and dice it.
- In the same pot, add onion and garlic, sauté until translucent.
- Add crushed tomatoes, vegetable broth, and Italian seasoning. Bring to a boil.
- Stir in broken lasagna noodles and cook until tender.
- Add spinach and cooked turkey bacon back into the pot.
- If using, stir in dairy-free cheese until melted.
- Season with salt and pepper to taste and serve hot.
