  • 1 pound turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons Italian seasoning
  • 8 ounces gluten-free lasagna noodles, broken
  • 2 cups spinach, chopped
  • 1 cup dairy-free cheese (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove bacon and dice it.
  2. In the same pot, add onion and garlic, sauté until translucent.
  3. Add crushed tomatoes, vegetable broth, and Italian seasoning. Bring to a boil.
  4. Stir in broken lasagna noodles and cook until tender.
  5. Add spinach and cooked turkey bacon back into the pot.
  6. If using, stir in dairy-free cheese until melted.
  7. Season with salt and pepper to taste and serve hot.
