  • 2 pounds beef chuck, cut into cubes
  • 4 slices turkey bacon, chopped
  • 4 cups beef broth
  • 2 cups red wine
  • 3 carrots, chopped
  • 2 potatoes, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Stir in the onions and garlic, cooking until softened.
  4. Add the carrots and potatoes, followed by the red wine and broth.
  5. Stir in the tomato paste, thyme, and bay leaves.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • For a thicker stew, you can add a slurry of cornstarch and water during the last few minutes of cooking.
