  • 2 pounds beef chuck, cut into cubes
  • 4 slices turkey bacon, diced
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 cup red wine
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add olive oil to the pot, then brown the beef cubes on all sides.
  3. Stir in the onion, carrots, celery, and garlic, cooking until softened.
  4. Pour in the red wine, scraping the bottom of the pot to release flavors.
  5. Add the beef broth, tomato paste, thyme, bay leaf, and the reserved turkey bacon. Bring to a boil.
  6. Reduce heat to low and simmer for 2-3 hours, or until beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • Serve with crusty bread for dipping.
