French Onion Chicken Rice Bake: Comfort in Every Bite

Experience the rich flavors of French onion soup paired with tender chicken and rice in this comforting bake.

  • 1 ½ cups uncooked rice
  • 2 cups chicken broth
  • 1 pound chicken breast, diced
  • 1 cup French onion soup
  • 1 cup grated cheese (Swiss or Gruyère)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken, salt, and pepper and cook until browned.
  3. In a large bowl, combine cooked chicken, uncooked rice, chicken broth, and French onion soup. Mix well.
  4. Transfer the mixture to a greased 9×13 inch baking dish. Cover with foil and bake for 45 minutes.
  5. Remove the foil, sprinkle grated cheese on top, and bake for an additional 15 minutes or until cheese is bubbly and golden.
  6. Let it cool for a few minutes before serving.

Notes

  • For added flavor, sauté onions with the chicken until caramelized.
  • Feel free to use leftover rotisserie chicken to save time.
