- 1 ½ cups uncooked rice
- 2 cups chicken broth
- 1 pound chicken breast, diced
- 1 cup French onion soup
- 1 cup grated cheese (Swiss or Gruyère)
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon pepper
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced chicken, salt, and pepper and cook until browned.
- In a large bowl, combine cooked chicken, uncooked rice, chicken broth, and French onion soup. Mix well.
- Transfer the mixture to a greased 9×13 inch baking dish. Cover with foil and bake for 45 minutes.
- Remove the foil, sprinkle grated cheese on top, and bake for an additional 15 minutes or until cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
