French Onion Chicken Orzo Casserole

A delicious and hearty casserole combining the flavors of French onion soup with chicken and orzo pasta.

  • 1 pound orzo pasta
  • 2 cups cooked, shredded chicken
  • 1 large onion, thinly sliced
  • 2 cups beef broth
  • 1 cup grated Gruyere cheese
  • 1 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, heat olive oil over medium heat and sauté the onions until caramelized.
  3. In a large bowl, combine the cooked orzo, shredded chicken, caramelized onions, beef broth, sour cream, salt, pepper, and thyme.
  4. Transfer the mixture to a greased baking dish and top with grated Gruyere cheese.
  5. Bake for 25-30 minutes, until bubbly and golden brown.
  6. Let it cool for a few minutes before serving.

Notes

  • For a richer flavor, use homemade beef broth.
  • Can be made ahead and stored in the refrigerator.
