  • 3 large eggs
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine pumpkin puree, eggs, almond butter, honey, and vanilla extract.
  3. Add baking powder, cinnamon, nutmeg, and salt to the bowl and mix until smooth.
  4. Scoop the batter into the prepared muffin tin.
  5. Bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Allow to cool before serving.
