Fall Apple Cider Stew Mash

  • 4 slices turkey bacon
  • 2 cups chopped apples
  • 1 cup apple cider
  • 2 cups diced potatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add chopped apples, onions, and garlic to the pot and sauté until they soften.
  3. Stir in the potatoes, apple cider, chicken broth, and thyme. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  5. Crumble the cooked turkey bacon into the stew and season with salt and pepper. Serve hot.
