Elote Pasta Salad Recipe (Mexican Street Corn)

This Elote Pasta Salad combines the flavors of Mexican street corn with pasta for a delightful dish that’s perfect for summer gatherings.

  • 8 ounces pasta
  • 2 cups corn, grilled or roasted
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 cup cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine corn, mayonnaise, sour cream, chili powder, cumin, cilantro, and lime juice.
  3. Add the cooked pasta to the bowl and mix until well coated.
  4. Fold in the cotija cheese and season with salt and pepper.
