  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup shredded cheese
  • 1/2 cup sun dried tomatoes, chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 large egg
  • 1/2 cup milk or dairy-free alternative

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the flour, baking powder, salt, and pepper.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the cheese, sun dried tomatoes, spinach, and turkey bacon.
  5. In a separate bowl, whisk together the egg and milk.
  6. Add the wet ingredients to the dry ingredients and mix until just combined.
  7. Drop spoonfuls of the batter onto a greased baking sheet.
  8. Bake for 15-20 minutes or until golden brown.
