Easy Pumpkin Pie Cheesecake

A delightful combination of classic pumpkin pie and creamy cheesecake.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 can (15 oz) pumpkin puree
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add pumpkin puree, eggs, vanilla, and spices. Mix until well combined.
  4. Pour the filling over the crust in the springform pan.
  5. Bake for 50-60 minutes or until the center is set. Let it cool before refrigerating.
  6. Chill for at least 4 hours before serving.

Notes

  • For a richer flavor, top with whipped cream and a sprinkle of cinnamon.
