Easy Creamy Lasagna Soup

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach, fresh or frozen
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef, onion, and garlic; cook until beef is browned and onion is translucent.
  3. Stir in chicken broth, diced tomatoes, tomato paste, and Italian seasoning.
  4. Bring to a boil, then add lasagna noodles and let cook until al dente.
  5. Reduce heat and stir in ricotta, mozzarella, Parmesan, and spinach. Cook until cheese is melted and soup is heated through.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a vegetarian version, substitute ground beef with mushrooms or lentils.
  • Top with fresh basil for added flavor.
