Dutch Oven Chicken and Rice

  • 4 chicken thighs
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a Dutch oven over medium heat.
  2. Add chicken thighs and cook until browned on both sides. Remove from pot.
  3. Add onions and garlic to the pot, sauté until translucent.
  4. Stir in paprika, rice, and return chicken to the pot.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  7. Add peas, stir, and serve hot.
