  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • 1 cup shredded cheese (optional)
  • 1 avocado, diced (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Place chicken, black beans, corn, tomatoes, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper into the crockpot.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. Once cooked, shred the chicken with two forks and stir to combine.
  4. Serve topped with tortilla strips, cheese, avocado, and cilantro as desired.
