Crispy Chicken with Blistered Courgettes and Herby Green Sauce

  • 4 chicken thighs
  • 2 courgettes
  • 3 tbsp olive oil
  • 1 lemon, zested and juiced
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1 bunch fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Season the chicken thighs with salt, pepper, and oregano.
  3. Heat olive oil in a skillet over medium heat.
  4. Add chicken thighs skin-side down and cook until golden brown, about 7 minutes.
  5. Transfer the skillet to the oven and roast the chicken for 25 minutes.
  6. In the same skillet, add sliced courgettes and sauté for 5 minutes.
  7. In a bowl, mix combined lemon juice, garlic, and parsley to create the herby green sauce.
  8. Serve the crispy chicken topped with courgettes and drizzled with the herby sauce.

Notes

  • For extra flavor, marinate the chicken with herbs overnight.
  • Adjust the amount of lemon juice according to taste.
