  • 2 cups corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cilantro, chopped

Instructions

  1. Cook elbow macaroni according to package instructions; drain and set aside.
  2. In a large bowl, combine corn, cherry tomatoes, red bell pepper, and red onion.
  3. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and black pepper.
  4. Combine the cooked macaroni with the vegetable mixture and pour the dressing over it.
  5. Toss gently until everything is well coated.
  6. Fold in the chopped cilantro.
  7. Cover and refrigerate for at least 30 minutes before serving.
