- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup diced tomatoes
- Salt to taste
- Black pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and chop.
- In the same pot, add onions, carrots, and celery. Cook until soft.
- Add garlic, oregano, and cumin; cook for 1 minute.
- Stir in black beans, corn, chicken broth, and tomatoes. Bring to a boil.
- Reduce heat, add cream, and simmer for 10 minutes.
- Add the chopped turkey bacon back to the pot and season with salt and pepper.
- Serve warm.
