  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, add onions, carrots, and celery. Cook until soft.
  3. Add garlic, oregano, and cumin; cook for 1 minute.
  4. Stir in black beans, corn, chicken broth, and tomatoes. Bring to a boil.
  5. Reduce heat, add cream, and simmer for 10 minutes.
  6. Add the chopped turkey bacon back to the pot and season with salt and pepper.
  7. Serve warm.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
