  • 1 pound chicken breast, diced
  • 4 strips turkey bacon, chopped
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup spinach
  • salt to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and turkey bacon. Cook until crispy.
  3. Add diced chicken to the skillet and season with Cajun seasoning. Cook until the chicken is no longer pink.
  4. Stir in garlic and bell pepper, sauté for a few minutes.
  5. Add heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
  6. Add cooked pasta and spinach to the skillet. Toss to combine until the spinach is wilted.
  7. Season with salt and pepper to taste. Serve hot.
