1 ½ cups all-purpose flour
½ cup granulated sugar
½ cup brown sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream
1 tablespoon ground cinnamon
¼ cup chopped walnuts (optional)
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, cream the butter and sugars until light and fluffy. Add eggs, one at a time, mixing well after each.
Mix in vanilla and sour cream until smooth.
Gradually add the dry ingredients to the wet mixture until just combined.
In a small bowl, mix together the cinnamon and chopped walnuts.
Scoop the batter into the muffin tin, filling each cup halfway, then sprinkle a layer of the cinnamon mixture and top with more batter.
Bake for 18-20 minutes or until golden and a toothpick inserted comes out clean.
Let cool for a few minutes before transferring to a wire rack.
