Coffee Cake Muffins

Delicious and easy-to-make coffee cake muffins perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, sour cream, and vanilla extract, mixing until combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fill muffin cups 2/3 full with batter and sprinkle with extra cinnamon sugar on top.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • For an added crunch, sprinkle nuts on top before baking.
  • These muffins can be stored in an airtight container for up to 3 days.
