Coconut Chicken and Rice

A comforting dish that brings together tender chicken and fragrant coconut rice.

Ingredients

  • 2 cups jasmine rice
  • 1 pound chicken thighs
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the garlic and ginger, cooking until fragrant.
  3. Stir in the chicken thighs, browning them on both sides.
  4. Add the rice, coconut milk, chicken broth, and soy sauce to the pot. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and chicken is tender.
  6. Fluff the rice with a fork before serving.

Notes

  • For extra flavor, marinate the chicken in soy sauce and garlic before cooking.
