- 1 cup turkey bacon, chopped
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 cup heavy cream
- 2 cups cooked potatoes, diced
- salt and pepper to taste
- In a large pot, heat olive oil over medium heat.
- Add turkey bacon and cook until crispy, about 5 minutes.
- Add onion, carrots, and celery. Sauté until vegetables soften, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add chicken broth and bring to a boil.
- Add cooked chicken and peas. Simmer for 10 minutes.
- Incorporate thyme and heavy cream. Stir well.
