  • 1 cup turkey bacon, chopped
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • 2 cups cooked potatoes, diced
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy, about 5 minutes.
  3. Add onion, carrots, and celery. Sauté until vegetables soften, about 5 minutes.
  4. Stir in garlic and cook for another minute.
  5. Add chicken broth and bring to a boil.
  6. Add cooked chicken and peas. Simmer for 10 minutes.
  7. Incorporate thyme and heavy cream. Stir well.
  8. Add diced potatoes and season with salt and pepper. Heat through.
  9. Serve hot, garnished with extra thyme if desired.
